Valencians love their typical dish too much. Whenever they have the chance, they’ll tell you that the whole world gets paella wrong: the wrong ingredients, even the wrong pronunciation!

The main ingredient

Valencian rice

Rice is the main ingredient in most Valencian dishes: arroz a banda (rice on the side), arroz al horno (oven-baked rice) and of course, paella.

It should be cooked to perfection; not too soft, not too hard. Saffron is a common seasoning.

Types of paella

The original paella includes chicken and rabbit. Most non-Spaniards believe paella is made with seafood but that’s, well, seafood paella! And when it features both, it’s called mixed.
